So I saw a recipe sort of similar to this on Pinterest and then changed it up to how I like it, and it has become a once a week meal for me. I know it doesn't look all that fancy but you have to try it because it's delicious!
Kale Burrito Bowls
What you'll need:
Kale (whatever kind you like best) cut into shreds
Tomatoes - or Pico de Gallo if you have time
Avocado
Ground beef
Black beans
Rice (optional)
Green salsa
Red pepper flakes
1 lemon
Olive oil
How you make it:
You can start by cooking your meat... I usually use taco seasoning because it's easy, but you can use whatever seasoning you want.
You can also heat up your beans and rice at this time. You don't really need the rice- as my no-carb diet dictates, I don't eat mine with rice, but I put it in if I am feeding other people, because it's more filling that way.
While that's all cooking, squeeze the juice of one lemon into a bowl, add about 1 tbsp olive oil and red pepper flakes (as much as you want depending on how spicy you like it) and add your chopped kale and pico de gallo and mix together. This mixture can sit out for 15-20 mins while you finish everything else- it will soften the kale and make it taste better.
Then just mash an avocado and mix in some salsa verde.
When you're all finished, layer the rice, beans, meat and then top with a heaping handful of the kale mixture, and then pour some of the avocado mixture over and you're ready to enjoy!
