I have never really been a big fan of lentils, but I tried this recipe recently, and it was so good! So if you are looking for a good, comforting lentil recipe, keep reading!
What You Need:
~1cup Lentils (I used Red, but you can use whatever kind you like)
5 slices Turkey Bacon
1 cup Mirapoix
2 cups Chicken Broth
Tuscan Kale
1 head Garlic
Red Pepper Flakes
How to Make It:
Start by heating some oil in a saucepan, and chopping up the turkey bacon. Once the oil is heated, add the bacon and sauté until crispy. Next, add in the mirapoix and garlic. Also add in some red pepper flakes (amount depends on how spicy you like it). soften the mirapoix mix and then add in the lentils and stir until slightly browned. Next add in Chicken broth and cook for as long as the package recommends. If it looks thick, you can add water or more broth. Once it is cooked mix in about 2 cups of chopped tuscan kale. Once it is wilted, it's ready to serve!
I served mine with turkey burgers (with spices, sriracha and feta cheese mixed in), and green beans with a dijon mustard and olive oil mixture.
