If you aren't sure what a chayote is, don't worry! Neither did I until about a month ago. A chayote is a mexican vegetable, that is shaped like a pear, and looks sort of like a squash. It is described as sort of a mix between a cucumber, melon, and squash. It is typically eaten cooked, but it can also be added raw into salads. It has a pretty bland flavor, and tastes good in mexican soups/stew/chile, but also is good sautéed simply in a pan with some oil and seasonings. So if you're feeling daring, get a few and try it out! :)

Makes 4-6 Servings
What You'll Need: 1 lb ground turkey 2 chicken breasts 1 yellow bell pepper 3 ears white corn 1 large yellow squash 1 can white beans 1/2 white onion (chopped) 1 T oil 1 jar chile verde salsa 2 cups chicken broth 2 cloves garlic 2 T cumin S&P 1 avocado 1 bunch cilantro How to Make It: Start by boiling the chicken breasts in water just until cooked, then shred it into small pieces. While its cooking, you can start chopping all of the veggies (bell pepper, corn, squash, and onion). Next, heat the oil in a large pot, and add in the onion, garlic and ground turkey. When the turkey is cooked, add the corn, squash, beans, and bell pepper. Then dump in the can of salsa. For mine, it looked too thick, so I made 2 cups of chicken broth and had it on hand to add as I felt it was necessary. (Depending on how you like your chili, you may or may not want to skip this step.) Now you can add the cumin, salt and pepper to taste. Cook until the veggies are cooked to your liking, and its ready to eat! For the garnish, roughly chop cilantro and slice or dice the avocado, place on top, and enjoy! Chinese Chicken Salad (Serves 2 people)
What You'll Need: For the Salad 2 Chicken Breasts (Mine were small-ish) 1/2 head Napa Cabbage 1 cup shredded carrots 1/2 cup edamame beans 1 cup snap peas (chopped into 1/2in pieces) 2-3 Green Onions 1 head cilantro For the Dressing/marinade 1/3 cup Teriyaki sauce 3 T Hoisin Sauce 2 T sriracha 3 T rice vinegar 3 T red wine vinegar 1/4 cup canola oil 1 t red pepper flakes S&P Start by mixing together the teriyaki, hoisin, and sriracha. Heat 2-3 T of oil in a pan and place the chicken in it. Spoon some of the sauce over the chicken. Flip and repeat. You should use about 1/2 of the sauce on the chicken, and reserve the rest. When it is cooked, you will want to slice the chicken. While the chicken is cooking, chop up the snap peas, onions, cilantro, and cabbage and add to a large bowl, along with the edamame and carrots. To the reserved sauce mix, add the vinegars, oil, pepper flakes, and salt and pepper to taste. This will be the dressing for the salad. Pour it over the salad and mix together. Serve the salad, place the chicken strips on the top, and ENJOY! It may not look too pretty in this picture, but it was yummy! This was my first attempt at a frittata, and it was a success!!
What You'll Need: 8 eggs 3-5 red potatoes 3-4 green onions 1 tomato 2 cups of chopped kale 1 cup Swiss Cheese 1 t nutmeg S&P How You Make It: First you will want to slice the potatoes into very thin slices and pan fry them in oil. Spray a pie plate with pam or oil spray. Layer the cooked potatoes into the bottom of the pie plate. Then chop up your kale, green onions and tomato. Quickly cook the green onions and kale in a pan. Then whisk the eggs, nutmeg, and salt and pepper together, and mix in the kale and onion, the chopped tomato, and 1/2 cup of cheese. Then pour the egg mixture over the potatoes, and sprinkle the remaining cheese over the top. Cook As a disclaimer, I have to preface this recipe by telling you haven't yet tried them, but I have faith that they will be delicious! What You'll Need: Mirapoix Garlic Oil Ham Zucchini Kale White Beans Canned Corn Tomato Paste Chicken Broth Cayenne Pepper S & P How You Make It: I bought a piece of turkey ham that came in sort of a big block. If you get that kind, cube it and cook it in a pan with some oil to crisp up the edges. Sautee the mirapoix mix with some garlic in a big pot with some oil. When it starts to soften, add in your chopped up zucchini and cook for a few minutes. Next, You can add in the crisped ham. Then pour in your corn and beans. Add in enough chicken broth to cover all of your ingredients. You can now add in about 1/2 can of tomato paste (2 tbsp). mix it all in, and add in chopped kale to wilt. You can finish by seasoning with some cayenne and S & P. I have never really been a big fan of lentils, but I tried this recipe recently, and it was so good! So if you are looking for a good, comforting lentil recipe, keep reading!
What You Need: ~1cup Lentils (I used Red, but you can use whatever kind you like) 5 slices Turkey Bacon 1 cup Mirapoix 2 cups Chicken Broth Tuscan Kale 1 head Garlic Red Pepper Flakes How to Make It: Start by heating some oil in a saucepan, and chopping up the turkey bacon. Once the oil is heated, add the bacon and sauté until crispy. Next, add in the mirapoix and garlic. Also add in some red pepper flakes (amount depends on how spicy you like it). soften the mirapoix mix and then add in the lentils and stir until slightly browned. Next add in Chicken broth and cook for as long as the package recommends. If it looks thick, you can add water or more broth. Once it is cooked mix in about 2 cups of chopped tuscan kale. Once it is wilted, it's ready to serve! I served mine with turkey burgers (with spices, sriracha and feta cheese mixed in), and green beans with a dijon mustard and olive oil mixture. Eating healthy means lots of fish, so here's another tilapia recipe to enjoy!!
What You Need: Cajun Seasoning (or make your own below) Tilapia fillets Flour Onion Oil Half and Half (room-temp) Cajun Seasoning Paprika Chili Powder Garlic Powder Onion Powder Red Pepper Flakes Italian Herbs S&P (no real exact measurement, kind of equal parts) How To Make it: Start by making your cajun seasoning, if you're making it. Then dice 1/2 a medium white or yellow onion. Start cooking the onion in a pan with some oil until they are soft and caramelizing. You can now mix about 1/2 the cajun seasoning with a couple tablespoons of flour. Heat a tbsp of oil in a large pan. Coat the fillets in the cajun flour mix and place in the pan. Cook on each side for about 5 minutes until cooked. While the fish is cooking, you can add the remaining cajun seasoning to the cooked onions, and then add some half and half- about 1/2-1 cup, depending how much fish you are making. Stir the half and half in until heated, and let it thicken (you can add some flour or corn starch for a thicker consistency). Serve, and top with the sauce. (I served it over brown rice, with garlic lemon asparagus and a simple kale salad.) Serves 2
What You'll Need: Tilapia filets (For as many people as you are feeding) 1/2 cup Parmesan Cheese Crushed Red Pepper Flakes 2 tbsp flour 1 egg 1 tbsp dijon mustard garlic salt/pepper Lemon What To Do: Mix together the parmesan, flour, red pepper flakes, garlic, salt and pepper in a shallow bowl or plate. Mix together the dijon mustard and egg. Heat some oil in a skillet pan. Dip the tilapia into the egg mix, then into the flour mix, then put into the pan. Cook about 5-6 minutes on each side. When finished, Squeeze lemon juice over the top. In the picture above, I served it with soba noodles, with lemon juice and salt and pepper, and green beans an broccoli. So the other day, I was craving some Pho, but wasn't in the mood to go out, so I went through my kitchen and threw this soup together. Its not exactly like traditional Pho, but it satisfied the craving, and only took about 15 minutes. What You'll Need:
Miso Soup Base (Packets available at Trader Joes) Soba Noodles (Glass noodles are traditional, but I didn't have any) Onions (I used green) 1 jalapeño A few sprigs of basil (thai or regular is fine) Chicken and Shrimp 1/2 Lime juice What to do: First take your chicken and slice it very thin and cook quickly in a pan with a little bit of oil and salt and pepper. I used frozen shrimp, so you can just defrost them. You will want to cook the noodles and heat the broth separately. Also, chop your onions, and slice the jalapeño and the basil. Put some noodles in the bowl first, then add in the meat, and pour the soup over that until the bowl is full, squeeze a lime on the top, add the toppings, and Enjoy! |
