If you couldn't tell by looking at this blog, I LOVE to cook, and it definitely came from my mom. My mom is a great cook, and this last weekend, I had the pleasure of helping her with one of her most recent cooking endeavors. She is always involved in some kind of volunteering, and as a member of a community organization, she auctioned off a home-cooked mediterranean themed dinner for 8. It was so popular, that they ended up selling 2 dinners to different families, and the proceeds went to charity. The dinner was held at another woman's house that was ABSOLUTELY gorgeous! Complete with wine cellar, horse ranch and beautiful garden, the home was the perfect setting for a gourmet meal. The homeowners were also responsible for an amazing array of wines paired with the dinner.
The Menu:
Appetizers: Spicy sausage empanada, Zucchini and feta roll up, Cheese stuffed veal meatball, and Eggplant Caponada on baguette toast.Soup: Carrot Bisque with parsley oil and bacon, with parmesan and herb breadrolls.
Salad: Red and Yellow beet, green apple, orange, pickled onion, and pistachio stack.
Entree #1: Seared scallops over roasted asparagus and citrus cream, topped with apricot marmalade and prosciutto.
Entree #2: Lemon wine chicken over pomodoro pasta.
Dessert: Pistachio baklava, chocolate truffle mousse, and lemon almond cake.
